Some like it hot! For those folks, this is your oil. A whopping twelve pounds of fresh, whole cayenne chilies are used for each gallon of olive oil produced. Crushed together at harvest, they are fused for two hours before decanting and filtering. Add a bit of this oil to any dish where you want to add heat, from eggs and burritos to soups and meats. We love it with Espresso or Fig Balsamic for a fantastic meat glaze. Pair it with Honey-Ginger Balsamic or Serrano-Honey Vinegar for stir-fry or kabab sauce. Or, if you like your salad dressing spicy, add Tangerine, Pomegranate Quince, or Pineapple Balsamic.
