Made in the traditional “Solera” method, it is cooked in small batches in copper kettles where the grapes are caramelized to a deep mahogany brown before aging up to 18 years in chestnut, oak, mulberry and ash barrels. More than a quaint or romantic step, the true caramelizing process is a rare step that means this balsamic is one of the few on the market without added caramel color or dye.
